Ingredients
These DIY Cup Noodles are endlessly adaptable and perfect for customizing! While I’ve listed a suggested combination of ingredients in the recipe card below, feel free to swap or adjust them based on your taste or whatever you have on hand. They’re also a great way to use up leftovers! If you'd like to make your own version of Cup Noodles at home, here are the key components to include:
- Bouillon Paste or Powder: This is the heart of the soup base. Use chicken, beef, or vegetable bouillon in powder, paste, or cube form. My personal favourite is Better Than Bouillon for its rich and robust flavour.
- Soup Base Seasonings: Bring your soup to life with bold flavours! Options include miso paste, Thai curry paste, soy sauce, sriracha, chili oil, hot sauce, garlic powder, onion powder, or fresh ginger. Experiment to create a base you love!
- Vegetables: About one cup of sliced vegetables works well. Fresh options like spinach, bell peppers, or mushrooms are excellent, as are frozen veggies like peas or corn. Pickled veggies like kimchi can also add a tangy twist.
- Protein: Shredded roasted chicken is used here, but you can easily substitute it with other cooked meats, cubed tofu, edamame, chickpeas, or a boiled egg.
- Noodles: Cooked thick egg noodles are a great choice for this recipe, but you can also use dry vermicelli which are thin rice noodles that cook quickly in hot water and absorb the flavourful broth beautifully. Other options are udon or glass noodles made from mung bean or sweet potato that also cook quickly in hot water!
- Garnishes: Finish your cup noodles with fresh herbs like cilantro, basil, or mint, chopped green onions, or a squeeze of lime juice for an extra burst of flavor.
These ingredients provide endless combinations, making it easy to create your perfect cup of noodles!

Instructions

STEP 1: Add ingredients (soup base, vegetables, protein, noodles, and garnishes) to a mason jar.

STEP 2: Refrigerate mason jar for up to 3-4 days until you're ready to eat.

STEP 3: Remove mason jar from fridge and let jar come to room temperature for 15-20 minutes by resting on the counter, or run it under lukewarm water for a couple of minutes. This will help prevent the hot water from cooling down too quickly, and reduce risk of glass cracking.

STEP 4: Boil 2 cups (500 ml) of water. Add boiling water to mason jar until the ingredients are fully covered. Cover with lid.

STEP 5: Let ingredients steep for 5 minutes until the ingredients are softened.

STEP 6: Remove the lid, squeeze lime wedge (if needed), give the contents a good stir to mix the soup base thoroughly, and enjoy!

Equipment & Storage
I love using my Hamilton Beach electric kettle for cup noodles - it makes boiling water super quick (ready in just 2 minutes!) and hassle-free. It’s fast, efficient, and heats water to the perfect temperature, saving time while ensuring your noodles cook perfectly every time!
As for my containers, I recommend using these 1 litre (32-ounce) wide-mouth mason jars. They're a perfect size for making these cup noodles for 1 serving, with lots of room to fit your ingredients in, and with a big enough opening to stir and eat out of. The air-tight seal also ensures freshness for up to 3-4 days in the fridge.

Toasty's Tips
- Customize Your Cup - Make it your own by mixing and matching ingredients! Try different proteins, veggies, or seasonings to suit your taste.
- Meal Prep Made Easy - Prepare multiple jars in advance for quick, grab-and-go meals. Store them in the fridge, and they’ll stay fresh for up to 3–4 days.
- Always Use Boiling Water - Pour freshly boiled water into the jar to ensure the ingredients cook evenly and the flavours blend perfectly.
- Pick Quick-Cooking Noodles - Thick cooked egg noodles are a great choice, but you can also experiment with ramen, vermicelli, udon, shirataki, or glass noodles for variety.
- Warm the Jar First - If the jar is cold from the fridge, let it sit at room temperature for 15 minutes or run it under lukewarm water. This prevents the hot water from cooling too quickly and reduces the risk of the glass cracking.
- Reheat If Needed - If the noodles aren’t hot enough, transfer them to a microwave-safe bowl, cover, and microwave for about a minute.
- Layer with Care - Start with bouillon and seasonings at the bottom, add the protein and vegetables next, and place the noodles on top. This keeps the noodles from soaking up too much liquid while stored.
