Ingredients
Please see recipe card below for exact quantities.
- Mashed Sweet Potato – The base of our brownies provides natural sweetness, fibre, moisture, and nutrients while giving it the structure it needs, without needing to use any flour!
- Nut Butter – Creamy, rich, and full of healthy fats. I'm using peanut butter, but you can also use almond or cashew butter, or even seed butter if you have nut allergies.
- Cocoa Powder – Gives these brownies their rich, deep chocolate flavour.
- Maple Syrup – A natural sweetener for our brownies, without the need to use refined white sugar.
- Eggs – Provide structure and binding to our ingredients during baking.
- Vanilla Extract – Helps round out the flavours with a boost of vanilla.
- Baking Soda – Gives our brownies a slight lift and helps them rise during baking.
- Chocolate Chips – A must for adding chocolatey sweetness and moisture to the brownies.

Instructions

STEP 1: Prepare the sweet potato by microwaving, baking, or steaming until soft. If microwaving, poke holes into sweet potato using a fork, then microwave for 6-7 minutes per potato. Mash until smooth.

STEP 2: In a mixing bowl, mix together Wet Ingredients.

STEP 3: In a separate bowl, mix together Dry Ingredients.

STEP 4: Add Dry Ingredients into the bowl of Wet Ingredients, and mix together until they combine into a smooth batter. Stir in chocolate chips and fold them into the batter.

STEP 5: Pour batter into a lined or greased 8x8 baking tray, making sure to spread batter out evenly. Top off with some extra chocolate chips if desired.

STEP 6: Bake in the oven at 350°F/177°C for 20-25 minutes, or until cooked.

STEP 7: When it's done baking, take it out and check for doneness with a toothpick. If it comes out clean, it's ready to eat. Otherwise bake again for an extra 2 minutes. Let the brownies sit out and cool down for 30 minutes to let it settle and firm up.

STEP 8 (Optional): Sprinkle powdered confectioner's sugar on top of brownies using a sift for added sweetness (and for the aesthetic!), if desired.

STEP 10: Cut brownies into squares, and enjoy!

Storage
You can store these brownies away in an air-tight container in the fridge for up to 5 days, or in the freezer for up to 3 months. Just thaw them in the fridge, or heat them up whenever you're ready to enjoy them!

Toasty's Tips
- Cook and mash sweet potatoes well - I like microwaving as a quick cooking method for sweet potatoes, but you can also cook and mash your potatoes by boiling, steaming, baking, or air-frying them!
- Let the brownies cool - always let the brownies cool and chill after baking for at least 30 minutes! This is important to let the brownies settle and firm up, giving you that classic brownie texture. I know it'll be hard to resist, but make sure not to skip this step!
- Incorporate mix-ins and toppings - adding dark chocolate chips helps enhance the texture and flavour, making the brownies more indulgent. But you can add whatever toppings and mix-ins you like! Nuts, seeds, coconut flakes, and dried fruits like raisins, are all great options! Powdered confectioner's sugar (as I've used in this recipe adds a nice little visual touch and some added sweetness as well.
