    Ingredients

    • Rice: Long-grain white rice or basmati for fluffy, separate grains.
    • Liquid base: Chicken broth and salsa give the rice a smoky, zesty base.
    • Seasoning: Taco spices like chili powder, cumin, paprika, garlic, and onion powder.
    • Veggies: Black beans, corn, bell peppers, and onions for colour and texture.
    • Protein: Diced chicken breast or thighs - tender and juicy when cooked in the rice cooker.
    • Toppings: Fresh cilantro, lime juice, avocado, Greek yogurt or cheese, and cherry tomatoes.

    Instructions

    STEP 1: Rinse the rice and add it to the rice cooker with broth and salsa.

    STEP 2: Stir in taco seasoning or your spice blend.

    STEP 3: Add black beans, corn, bell peppers, onions, and diced chicken on top.

    STEP 4: Close the lid and cook - a standard rice cooker should take about 25-30 minutes.

    STEP 5: Fluff the rice and top with cilantro, lime juice, avocado, and a bit of cheese or Greek yogurt. Enjoy!

    Storage and Equipment

    Store leftovers in an airtight container in the fridge for up to 3-4 days, or freeze for up to 2 months. Reheat in the microwave or on the stovetop with a splash of water to bring back the moisture.

    For equipment, you'll need a rice cooker! Any rice cooker will work just fine. I personally use a simple Aroma 3-Cup Rice Cooker which has no fancy functions - just a simple switch. It's the perfect size for this recipe - it's affordable, produces consistent results, and has capacity to make a few servings at a time. If you’re cooking for a larger family or batch cooking, the Aroma 8-Cup Rice Cooker is a great option for the extra capacity. For an upgrade pick, I recommend a Zojirushi 5.5-Cup Rice Cooker for its premium quality, advanced grain settings, and ability to make delicious, quality rice.

    Toasty's Tips

    • Use small, evenly cut pieces of chicken so they cook through in the same time as the rice.
    • Want more spice? Add a pinch of cayenne or diced jalapeños.
    • To make it vegetarian, swap the chicken for extra beans or tofu.
    • Don’t stir too much before cooking - just layer and let the rice cooker do the work.
    • This reheats really well, so it’s great for meal prep or lunches.
    • Feel free to customize this with your favourite vegetables and proteins - no need to stick to the ones I use!
    • Instead of using the various spices listed, swap them out for taco seasoning (1 tbsp) instead - super convenient!

    • 1 cup white rice - long grain Jasmine (or your choice)

    Liquid

    • ¾ cup chicken broth - or water, or other broth
    • ¼ cup salsa

    Seasonings (or replace these with 1 tablespoon of taco seasoning)

    • 1.5 teaspoon chili powder
    • ½ teaspoon cumin
    • ¼ teaspoon smoked paprika
    • ¼ garlic powder
    • ¼ teaspoon onion powder
