- Dates - the star of the show. Dates provide natural sweetness, lots of nutritional benefits, and a quick boost of energy.
- Almonds - for adding healthy fats and other nutrients. I like crushed almonds but you can use whatever nuts you like. Seeds are also a great substitute for those with nut allergies.
- Vanilla extract - for a pop of delicious vanilla flavour.
- Sea salt - to help bring the flavours out.
- Coconut flakes - adds yummy coconut flavour and a crunchy texture. I use unsweetened coconut flakes for this recipe.

What Type of Dates to Use?
I always recommend using medjool dates for these energy balls. Unlike regular dates which are smaller and firmer, medjool dates have a soft and chewy, caramel-like texture with a delightfully sweet taste, making them perfect to use for this recipe. When blended, they have a smooth and soft mouldable texture that's ideal for binding ingredients into densely packed energy balls. Make sure to remove the pits before blending (they easily pop right out), or you can buy pre-pitted dates for convenience.

Add-Ins and Toppings
The beauty of these energy balls is how easy they are to customize with your own favourite ingredients. Be creative and experiment with different flavour combos!
- Nuts and seeds - mix and match different types of nuts and seeds for healthy fats and nutrition with a crunchy texture.
- Dried fruits - while dates provide the base of this recipe, you can also mix in raisins, dried cranberries, dried blueberries, or sliced dried apricots for some more chewy sweetness and energy.
- Chocolate chips - mix in a handful of mini chocolate chips for a tasty little sweet treat. You can even melt it as a chocolate syrup and drizzle it on top!

Instructions

STEP 1: Prepare dates by removing pits. If you find them too stiff, soften them in a bowl of warm water for 10 minutes.

STEP 2: In a food processor, add the almonds and give it a few quick pulses to crush them into small pieces.

STEP 3: Add the other ingredients into the food processor.

STEP 4: Blend for about a minute until the mixture becomes a mouldable, crumbly dough.

STEP 5: Check the mixture's consistency to make sure it easily forms into a ball. If it's too dry, add 1 teaspoon of water and mix again. If it's too wet, add some nuts, seeds, or oats and mix again.

STEP 6: Using your hands or a cookie scooper, portion the mixture into 1-inch balls (roughly 16 balls) on a baking tray.

STEP 7: Press and roll them into your hands to smooth them out into balls. Refrigerate for 1 hour.

STEP 8: When they're ready, take the energy balls out and enjoy!

I love using my KitchenAid 3.5 Cup food processor - it has a convenient on/off trigger for easy control of the machine (great for pulsing nuts), and is a perfect size for a batch of this recipe. I also love how compact it is - it stores easily and sits on the counter without taking up much space.

Storage
You can store these away in a sealable container in the fridge for up to 1 week, or freeze them for up to 2 months. Just thaw them in the fridge for a few hours when you're ready to enjoy them. My personal go-to favourite storage containers are these Rubbermaid containers that I use for all my meal prep. They come with sealable, stackable lids and are freezer-safe.

FAQ

Can I use date paste instead?
Yes you can! Date paste is a fantastic alternative to regular whole dates because it's already pre-blended. You can then skip the food processor (or use it just for crushing nuts) and mix the ingredients in a mixing bowl instead.
What do I do if the mixture is too wet and loose, or dry and crumbly to mould into balls?
When pressing the mixture into balls, it should bind together without falling apart. If it's too dry and crumbly, you can add a splash of water, 1 teaspoon at a time, until you reach the right consistency that makes it easy to mould. If it's too wet and loose, you can add some more dry ingredients such as crushed nuts, seeds, or oats.
I have nut allergies. Do I have to use nuts?
Not at all! Nuts help add a crunchy texture, but you can certainly use seeds (such as pumpkin, sunflower, or chia seeds) as a replacement, or oats as well for a chewier texture. Feel free to use whatever you like!
