Ingredients
- Silken tofu – creates a smooth, creamy base without adding flavour; soft tofu can work, but silken blends best
- Instant coffee or espresso powder – adds bold coffee flavour; brewed espresso also works
- Unsweetened cocoa powder – deepens the chocolate flavour
- Dark chocolate – adds richness and a more decadent texture
- Vanilla extract – rounds out and balances the flavours
- Maple syrup – sweetens the mousse while keeping it plant-based
- Salt – enhances the chocolate and coffee flavours

Instructions

STEP 1: Add the silken tofu, coffee or espresso, cocoa powder, melted dark chocolate, vanilla extract, maple syrup, and salt to a blender.

STEP 2: Blend until completely smooth and creamy, scraping down the sides as needed. Taste and adjust the sweetness or coffee intensity to your liking.

STEP 3: Spoon the mousse into jars or glasses, cover, and refrigerate for at least 1 hour to allow it to chill and firm up.

STEP 4: When it’s chilled and ready, take it out and top it off with your favourite toppings, or enjoy it just as it is.

Storage and Equipment
Store the mousse in an airtight container or sealed mason jars in the fridge for up to 2 to 3 days.
For storage, I love using 8-oz (236 ml) wide-mouth mason jars, as they’re the perfect size for individual portions and show off the clean, set texture nicely. You’ll also need a blender (my favourite go-to blender for these recipes is a Nutribullet), some mixing bowls, and jars or glasses for serving.

- Use silken tofu for the smoothest texture. Firmer tofu will not blend as smoothly.
- Adjust the coffee amount based on how strong you want the mocha flavour.
