- Greek yogurt - I like to use plain or vanilla Greek yogurt, but you can use whatever yogurt you like. Opt for a higher fat yogurt for a creamier texture.
- Honey - liquid sweeteners work best for this recipe, such as honey, maple syrup, or agave nectar.
- Vanilla extract - for a pop of delicious vanilla flavour.
- Lemon - to give us the boost of bright, citrusy lemon flavour.
- Pineapple - sliced fresh pineapple is a delicious tropical topping that works great this recipe.
- Kiwi - sliced fresh kiwi is a wonderful add-in as a topping for a tropical boost.
- Blueberries - blueberries give a little bit of tartness and always pairs well with lemon.
- Coconut flakes - you can't have tropical without some coconut!
- Sliced almonds - you can feel free to use any kinds of nuts or seeds you like.

Instructions

STEP 1: First, grab a lemon and grate 2 teaspoon of lemon zest, and squeeze 2 teaspoon of lemon juice using a citrus juicer.

STEP 2: In a mixing bowl, combine and mix the Yogurt Mixture ingredients together until well combined.

STEP 3: Pour yogurt mixture onto a baking sheet lined with parchment paper. Spread it out into a thin layer.

STEP 4: Add toppings onto the yogurt mixture.

STEP 5: Place baking sheet in the freezer for at least 4 hours until yogurt is hardened.

STEP 6: When fully hardened, remove yogurt bark from parchment paper and break apart into small pieces - you can use your hands or cut with a knife.

STEP 7: Store the yogurt bark in an air-tight container in the freezer until you're ready to enjoy them, and consume right away before they melt. Enjoy!

Store the yogurt bark in an air-tight container or freezer bag in the freezer for up to 3 months. Make sure to keep them frozen right up until you're ready to enjoy them!
Toasty's Tips
- Make sure to freeze the yogurt bark for at least 4 hours before taking them out. This will ensure that they are fully hardened.
- Spread the yogurt mixture into a thin layer for a crispy bark. A thinner bark will melt faster, however, so if prefer yogurt bark that melts a bit more slowly when out at room temperature, make sure to spread your yogurt into a thicker layer.
- Opt for a higher fat yogurt for a creamier texture. Lower fat yogurts will be more icy in texture due to the higher water content, however they will still work fine in this recipe as well.
- Feel free to add your favourite choice of nuts, seeds, dried fruits, supplement powders, or other mix-ins as you like. It's easily customizable!
- Feel free to adjust the amount of sweetener in this recipe to your tastes.
