Instructions

STEP 1: Add the cottage cheese, lemon zest, lemon juice, vanilla extract, and sweetener to a blender.

STEP 2: Blend until completely smooth and creamy, scraping down the sides as needed.

STEP 3: Taste and adjust to your liking, adding more lemon zest for extra tang or more sweetener if needed.

STEP 4: Spoon the mousse into jars or glasses, cover, and refrigerate for at least 1 hour to help it thicken.

STEP 5: When it’s chilled and ready, take it out and enjoy it as-is, or top it with your favourite toppings.

Storage and Equipment
Store the mousse in an airtight container or sealed mason jars in the fridge for up to 2 to 3 days.
For storage, I love using 8-oz (236 ml) wide-mouth mason jars, as they’re the perfect size for individual portions and show off the clean, set texture nicely. You’ll also need a blender (my favourite go-to blender for these recipes is a Nutribullet), some mixing bowls, and jars or glasses for serving.

- Blend thoroughly to achieve a smooth texture. Cottage cheese needs a bit of time to fully break down.
- This mousse is naturally a bit thinner than gelatin-set mousses.
- If you prefer a thicker, more structured texture, you can add unflavoured gelatin bloomed in water, just like in the previous recipes.
- Adjust the lemon flavour to taste by increasing the zest for brightness or the juice for more tang.
- This mousse pairs well with toppings like whipped cream, berries, granola, or extra lemon zest.
