What are Overnight Oats?
Overnight Oats are a perfect breakfast meal prep solution for those busy mornings. They're made by soaking old-fashioned rolled oats in liquid (most commonly milk) in the refrigerator overnight where they will soften up into a delicious, thick texture.
Unlike oatmeal, there is no cooking required - and the best part is they can be prepared in under 5 minutes, and easily customized with different ingredients and toppings to create some very unique flavours!
Ingredients

- Rolled oats - I use old-fashioned rolled oats; I do not recommend using steel cut, quick or instant oats as they don't absorb liquid very well.
- Unsweetened almond milk - you can use any milk of your choice, but I recommend using plant-based milk for this recipe (such as almond or cashew milk). If using cow's milk, keep in mind that the lemon juice may cause possible curdling in the milk.
- Greek yogurt - yogurt adds extra creaminess to overnight oats, so I always make sure to add this to mine. You can use any type you like, but I prefer Greek yogurt!
- Chia seeds - packed with nutrients, one of my favourite superfoods. They also add thickness to the overnight oats when they expand and gelatinize in liquid.
- Maple syrup - or you can use your preferred choice of sweetener here. Honey works great as well!
- Lemon - the star of the show, adds a real bright, zesty, citrus punch. Bonus that it contains immune-enhancing properties too!
- Blueberries - you can use fresh or frozen. They complement the lemon perfectly with some added fruity sweetness, and contain anti-oxidants for a nutritional boost.
- Vanilla extract - for a splash of flavour.
- Coconut flakes - for some extra added sweetness and adds a summery, tropical feel to the recipe.
- Hemp hearts - these overnight oats are a great way to mix in nutritional boosters. Hemp hearts are packed with vitamins and healthy fats; but you can mix in whatever you like.
Instructions

STEP 1: Squeeze juice from lemon.

STEP 2: Finely grate zest using the remaining lemon.

STEP 3: In a mason jar (or other sealable container), mix together oats, milk, yogurt, chia seeds, maple syrup, lemon juice, lemon zest, blueberries, and vanilla extract. Snap on a lid and refrigerate overnight (or at least 2-3 hours).

STEP 4: Take it out of the fridge, and top it off with more blueberries, hemp hearts, and coconut flakes. Enjoy!

How to Store
Make sure to store this in an air-tight container, such as a mason jar. My personal favourite are these 16-ounce wide-mouth mason jars that have a wide opening for easy stirring and clean-up. While overnight oats can typically be stored in the refrigerator for up to 5 days, I find that with this recipe, it is best if consumed within 2-3 days due to the lemon juice. As always, use your own judgement as different types of ingredients (due to various factors, such as freshness) can have varying shelf-life.

FAQ
Can I make this without yogurt?
Yes, you can certainly make overnight oats without yogurt. I recommend adding yogurt for the extra creaminess it adds; however the oats will soften up in the milk on its own without any issue. There is no need to add more milk to compensate for the removal of the yogurt.
Can I use other types of toppings if I don't have or like hemp hearts or coconut flakes?
Absolutely! The beauty of overnight oats is how easily customizable they are. If you don't like hemp hearts or don't have coconut flakes, feel free to add whatever toppings you like for more flavour, nutrition, and/or texture. With this recipe, it's hard to go wrong!
Can I add protein powder?
Yes, you certainly can! I prefer to use unsweetened, unflavoured protein powder so that it doesn't interfere with the flavours of the recipe. But if adding protein powder, make sure to also mix in some extra milk to compensate for the added dryness from the powder.
