    • High in protein with simple everyday ingredients
    • Soft, creamy texture similar to cheesecake

    Ingredients

    • Yogurt – I recommend using plain Greek yogurt for a thicker, higher-protein texture, but regular yogurt will also work.
    • Egg – Helps bind the ingredients together and creates the custard-like texture.
    • Cornstarch – Acts as a stabilizer to help create a soft and creamy texture.
    • Sugar or sweetener of choice – Adds sweetness to balance the tanginess of the yogurt and lemon. Granulated sugar works best for a slightly firmer texture.
    • Vanilla extract – Adds a subtle vanilla flavour that complements the creamy yogurt base.
    • Lemon zest – Adds a bright citrus flavour without adding too much extra liquid.
    • Lemon juice – Adds extra lemon flavour and a slight tanginess to the baked yogurt.
    • Blueberries – Add natural sweetness and juicy bursts of flavour throughout.

STEP 6: Let it cool for about 30 minutes before serving to allow the yogurt to set. You can enjoy it warm for a softer texture, or refrigerate it for a firmer, more cheesecake-like texture.

STEP 7: Enjoy it warm while it’s still soft and creamy, or chill it in the fridge for a few hours for a firmer, cheesecake-like texture.

    Storage and Equipment

For this recipe, you’ll need a small oven-safe baking dish, such as an 8-ounce ramekin, along with a mixing bowl and whisk to combine the ingredients. When it comes to baking, you can make this recipe using either an air fryer or a regular oven.

Store any leftovers in an airtight container and keep refrigerated for up to 3–4 days. For the best texture, enjoy it chilled straight from the fridge, or let it sit at room temperature for a few minutes before serving for a softer, creamier texture.

    Toasty's Tips

    • Use fresh lemon zest for the best flavour: Lemon zest provides a concentrated citrus flavour without adding extra liquid, making it the best way to add brightness to this recipe.
    • Use granulated sugar for a firmer texture: Since lemon juice adds extra moisture, using a granulated sweetener like sugar can help create a slightly firmer baked yogurt compared to liquid sweeteners like maple syrup.
    • Don’t add too much lemon juice: A little lemon juice goes a long way. Adding too much can make the texture softer and affect how well the yogurt sets.
    • Use fresh or frozen blueberries: Both work well in this recipe. If using frozen blueberries, there’s no need to thaw them first.
    • Let it cool before serving: Cooling allows the baked yogurt to set and firm up. It’s also normal for it to sink and deflate slightly as it cools.
    • Customize the flavours: Try swapping blueberries for other berries, or experiment with different citrus flavours like orange or lime.
