These easy and nutritious Greek Yogurt Brownies are a soft, fudgy, and high-protein alternative to traditional brownies. Made without butter or oil, they’re a healthier way to indulge, with a smooth, tangy chocolate yogurt frosting to top it off.

Ingredients

- Greek Yogurt - the base of our brownies (and frosting!) which gives moisture to our brownies while also being a great source of protein.
- Cocoa Powder - gives our brownies a deep, rich chocolate flavour.
- Eggs - helps bind everything together and gives our brownies a moist, fudgy texture.
- Maple Syrup or Honey - I'm using a natural sweetener for these brownies instead of refined white sugar as is typical in many classic brownie recipes.
- Oat Flour - provides structure to our brownies, while keeping them gluten-free and wholesome (using gluten-free oat flour).
- Baking Powder - adds lightness to the brownies.
- Vanilla Extract - for a delicious hint of vanilla flavour.
- Chocolate Chips - a must for added moisture, texture, and sweetness. Opt for dark chocolate chips as a healthier option!

Instructions

STEP 1: In a mixing bowl, mix together Wet Ingredients.

STEP 2: In a separate bowl, mix together Dry Ingredients.

STEP 3: Add dry ingredients into the bowl of wet ingredients, and mix until combined into a smooth batter.

STEP 4: Stir in chocolate chips into the batter until well distributed.

STEP 5: Pour batter into a lined or greased 8x8 baking tray, making sure to spread batter out evenly. Sprinkle extra chocolate chips on top if desired.

STEP 6: Bake in the oven at 350°F/177°C for 25-30 minutes, or until cooked.

STEP 7: While it's baking, prepare Chocolate Yogurt Frosting by mixing together the ingredients for the frosting in a bowl, as listed above.

STEP 8: When it's done, take it out and check for doneness with a toothpick. If it comes out clean, it's ready to eat. Otherwise bake again for an extra 2 minutes. Let the brownies sit out and cool down for 30 minutes to let it settle and firm up.

STEP 9: Once cooled, spread Chocolate Yogurt Frosting on top of the brownies. Sprinkle on top some extra chocolate chips, if desired.

STEP 10: Cut brownies into squares, and enjoy!

Storage
You can store these brownies away in an air-tight container in the fridge for up to 5 days, or in the freezer for up to 3 months. Just thaw them in the fridge, or heat them up whenever you're ready to enjoy them!
Keep in mind that the chocolate yogurt frosting has a shorter shelf life - you can store it away in an air-tight container like a mason jar, in the fridge for up to 3-4 days. Given the frosting's shorter shelf life, feel free to store it separately in a mason jar, and spread it onto the brownie slices individually right before you're ready to enjoy them. The brownies (without the frosting layered on) can last up to 5 days in the fridge, but shortens to about 3-4 days with the frosting.
You can also use the chocolate yogurt frosting not only on these brownies, but also on muffins, cakes, and pastries!

Toasty's Tips
- Taste and adjust sweetness - since yogurt has a mild and tangy flavor, give your batter and frosting a quick test taste before baking to ensure it's sweetened to your preference.
- Use and store frosting separately - you can store the frosting separately in a mason jar and use it on your brownies, cakes, muffins, and pastries whenever you're ready to eat them - the frosting will last for 3-4 days in the fridge (while the brownies will last up to 5 days without the frosting layered on).
