Ingredients

- Rolled oats - provide a delightful soft and chewy texture. I recommend old-fashioned rolled oats, but quick oats can also be used.
- Milk - any type of milk will work; I prefer unsweetened almond milk.
- Egg - you can also use a flax egg as a vegan alternative. (See notes below for instructions on how to make it!)
- Maple syrup - I prefer maple syrup as my sweetener of choice. Adjust the amount to your taste or substitute with honey or agave syrup.
- Vanilla extract - adds a burst of vanilla flavour.
- Baking powder - helps the oatmeal cups rise and expand, giving them a fluffy texture.
- Ground cinnamon - adds a subtle spice to enhance the flavour.
- Cocoa powder - I use unsweetened cocoa powder so that I can adjust the sweetness separately. This will give our oatmeal cups the rich, chocolatey flavour.
- Mini chocolate chips - so deliciously gooey and sweet when melted during baking!
- Walnuts - crushed walnuts to add a bit of crunchy texture, nuttiness, and healthy fats to our oatmeal cups.
- Salt - to help bring out the flavours.
Instructions

STEP 1: Into a bowl, mix together dry ingredients.

STEP 2: Into a separate bowl, mix together wet ingredients with a whisk.

STEP 3: Add dry ingredients to wet ingredients, as well as the mix-ins, and stir until well combined.

STEP 4: Grease a 6-cup muffin tin with cooking spray (or use silicone liners). Evenly distribute batter into each muffin cup.

STEP 5: Pre-heat oven at 350°F/177°C, then bake for 25 minutes or until cooked.
Alternatively, pre-heat air fryer at 330°F/165°C, then bake for 12-15 minutes or until cooked.

STEP 6: When done, take it out and check for doneness with a toothpick. If batter sticks to the toothpick, cook for another 2-3 minutes. Let it cool down for a few minutes, then enjoy!

Equipment
When baking these oatmeal cups, you have two great options: using either an oven or an air fryer. Personally, I find my Cosori air fryer or Breville Smart Oven perfect for this recipe and other baking needs. These appliances heat up quickly, ensure even cooking, and consistently produce excellent results.
For baking, I recommend using a 6-cup muffin tin that fits perfectly into my Smart Oven. Alternatively, silicone liners are also suitable - they fit snugly in both a muffin tin and an air fryer. I love using my Oxo silicone liners that are equipped with pull-tabs for easy removal of the oatmeal cups.

Meal Prep and Storage
These oatmeal cups are ideal for meal prep. You can store them in an airtight container in the refrigerator for up to a week, or freeze them for up to 3 months. For meal prep, I find Rubbermaid containers particularly convenient due to their various sizes, which simplify organizing and storing meals effectively.
