Ingredients
These DIY Cup Noodles are so easily customizable. I've provided a combination of ingredients for this recipe in the recipe card below, but you can customize the ingredients based on your own individual preferences or whatever you have on hand at home! They're a great way to use up any leftovers. If you'd like to create your own version of Cup Noodles at home, here are the main categories I'd include:
- Bouillon paste or powder - This will be the foundation of our soup base. You can use chicken, beef, or vegetable bouillon in either powder, paste, or cube form. Better Than Bouillon is one of my personal favourite brands!
- Soup base seasonings - Seasonings give our soup base flavour and make it come alive! You can use anything to enhance the flavour - miso paste, Thai curry paste, soy sauce, sriracha, hot sauce, chili oil, garlic or onion powder, fresh ginger, etc. Be creative in developing some flavourful soup bases!
- Vegetables - I recommend about a cup of sliced vegetables - this can be an assortment of whatever you have in your fridge that you'd like to use up! Fresh vegetables like baby spinach, bell peppers and mushrooms are great choices, as are frozen vegetables like corn and peas. You can even use pickled vegetables like kimchi!
- Protein - I'm using shredded roasted chicken breast for this recipe, but you can also use other cooked meats, cubed tofu, edamame, chickpeas, or a hard-boiled egg.
- Vermicelli Noodles - Thin dry rice noodles that cook quickly in hot water, and absorb the savoury broth beautifully. You can also use cooked noodles like udon or egg noodles, or dry glass noodles made out of mung bean or sweet potato!
- Garnishes - These help enhance the flavour of our cup noodles. You can use fresh herbs like basil or mint leaves, cilantro, green onions, or lime juice!

Instructions

STEP 1: Add ingredients (soup base, vegetables, protein, noodles, and garnishes) to a mason jar.

STEP 2: Cover with lid and refrigerate mason jar for up to 3-4 days until you're ready to eat.

STEP 3: Remove mason jar from fridge and let jar come to room temperature for 15-20 minutes by resting on the counter, or run it under lukewarm water for a couple of minutes. This will help prevent the hot water from cooling down too quickly, and reduce risk of glass cracking.

STEP 4: Boil 2 cups (500 ml) of water. Add boiling water to mason jar until the ingredients are fully covered. Cover with lid.

STEP 5: Let ingredients steep for 5 minutes until the ingredients are softened.

STEP 6: Remove the lid, squeeze lime wedge (if needed), give the contents a good stir to mix the soup base thoroughly, and enjoy!

For containers, I recommend 1 litre (32-ounce) wide-mouth mason jars. They’re just the right size for a single serving, with enough space for all your ingredients and a wide opening for easy stirring and eating. The airtight seal also keeps everything fresh for up to 3–4 days in the fridge.

- Use quick cooking noodles - while vermicelli noodles are a great choice, feel free to experiment with other quick-cooking options like ramen, udon, shirataki, or glass noodles.
- Leave the jar out at room temperature for 15 minutes after taking it out of the fridge, or run it under lukewarm water for a couple of minutes. This will prevent the cold jar from cooling down the hot water too quickly, and reduces risk of glass cracking.
