- Oats - opt for old-fashioned rolled oats or quick oats, as steel cut oats won't work for this recipe.

- Milk - while I like using unsweetened almond milk, any choice of milk will work fine.
- Egg - essential for binding and rising our ingredients during baking, resulting in a moist and fluffy texture. For a vegan alternative, a flax egg can be used.
- Banana - similar to the egg, banana helps our ingredients bind and rise while adding moisture and sweetness. Make sure the banana is ripened - the browner and more spotted it is, the sweeter it will be.
- Maple syrup - for a touch of added sweetness. You can also use honey, agave nectar, or whatever sweetener you like.
- Vanilla extract - for a boost of delicious vanilla flavour.
- Ground cinnamon - for the warm and cozy comfort vibes.
- Pinch of salt - to help bring out all the flavours.
- Grated carrot - can't have carrot cake without grated carrot!
- Chopped pecans - you can use whatever nuts (or seeds if allergic) you like.
Instructions

STEP 1: Add ingredients #1-9 to blender.

STEP 2: Blend the ingredients for 30 seconds until it turns into a smooth, runny batter.

STEP 3: Grease an 8-ounce ramekin (or other similar-sized oven-safe dish) with cooking spray, then pour batter mixture into it.

STEP 4: Finely grate a carrot, then mix it into the batter along with chopped pecans. Sprinkle some more as toppings if you like.

STEP 5: Bake it in the air fryer (300°F for 12-15 min) or oven (350°F for 25-30 min).

When it comes to baking, these blended oats can be prepared using either an oven or an air fryer. My go-to air fryer is from Cosori - it not only bakes faster than an oven but also consistently delivers evenly cooked results. I also love using my compact countertop mini oven from Breville, which heats up super quickly and saves me the hassle of turning on my larger oven. For individual servings, I opt for an 8-ounce ramekin, perfectly sized for single portions of this recipe.

Use Oat Flour Instead
Instead of using a blender and whole oats each time, consider using oat flour as an alternative! This is a great option for people who either don't own a blender or food processor at home, or want to avoid the inconvenience of taking it out every time they make this recipe.
Oat flour can be found at most grocery stores or can be easily prepared by blending rolled oats into a fine powder using a blender. Personally, I find it helpful to keep a container of oat flour handy in the kitchen — it's super convenient to use for a variety of baking!
Then, simply mix the oat flour (⅓ cup) with the other ingredients using a whisk in a mixing bowl in order to create your batter. It's a big time-saver.
Meal Prep and Storage
You can store these blended baked oats in the fridge for up to five days, making them perfect for preparing in advance and enjoying throughout the week. While the recipe is designed for single servings, you can easily scale up by doubling or tripling the ingredient quantities to prepare multiple servings at once. For example, rather than using ramekins for individual servings, you can prepare a larger batch of batter and pour it into a large muffin tray or baking dish for convenient meal prep for the week ahead.

Toasty's Tips
- After baking, feel free to finish it off with your favourite toppings! I love adding a spoonful of Greek yogurt for a creamy add-on.
- You can also add in your choice of seeds and superfoods for a nutritional boost!
- Mix in 1-2 tablespoon of protein powder for some added protein - I've done this without needing to change any of the other ingredients, and it's turned out great every time.

FAQ
My baked oats seem undercooked. What do I do?
Keep in mind that all ovens and air fryers are different so cooking times may vary depending on your equipment. You can check for doneness by inserting a toothpick in the middle of the baked oats - if it comes out clean, it's done! If batter sticks to the toothpick, let it bake for another 1 to 2 minutes and then test again. Some people also enjoy their baked oats to be a little on the undercooked side, but it's totally up to you!
I'm vegan. Do I have to use the egg?
A "flax egg" is a great vegan substitute for regular eggs. In a small bowl, simply mix together 1 tablespoon of ground flaxseed, with 3 tablespoon of water. This will replace the moisture lost from one regular large egg.
I'm not a fan of banana. Can I use something else?
You bet! A great substitute for banana is applesauce - just add ¼ cup to replace the half banana! You may need to add a bit of extra sweetener to replace the sweetness lost from the ripened banana (especially if you opt to use unsweetened applesauce).
What if I don't have a blender?
