This recipe feels comforting and indulgent while still being simple, nutritious, and packed with protein.

    • High in protein with simple everyday ingredients
    • Naturally sweetened with ripe banana
    • Soft and creamy texture similar to banana bread and cheesecake
    • Easy to make with pantry-friendly ingredients
    • Naturally gluten-free
    • Perfect for breakfast, a snack, or a light dessert
    banana bread baked yogurt

    Ingredients

    • Yogurt – I recommend using plain Greek yogurt for a thicker, higher-protein texture, but regular yogurt will also work.
    • Egg – Helps bind the ingredients together and creates the custard-like texture.
    • Cornstarch – Acts as a stabilizer to help create a soft and creamy texture.
    • Maple syrup or sweetener of choice – Adds extra sweetness and helps balance the tanginess of the yogurt.
    • Vanilla extract – Adds a subtle vanilla flavour that complements the banana and cinnamon.
    • Banana – Adds natural sweetness, creamy texture, and delicious banana flavour. For the best results, use a ripe banana with plenty of sweetness.
    • Cinnamon – Adds warmth and enhances the cozy banana bread flavour.
    • Salt – A small pinch helps balance the sweetness and bring out the flavours.

    Storage and Equipment

For this recipe, you’ll need a small oven-safe baking dish, such as an 8-ounce ramekin, along with a mixing bowl, whisk, and fork or masher to mash the banana. When it comes to baking, you can make this recipe using either an air fryer or a regular oven.

Store any leftovers in an airtight container and keep refrigerated for up to 3–4 days. For the best texture, enjoy it chilled straight from the fridge, or let it sit at room temperature for a few minutes before serving for a softer, creamier texture.

    Toasty's Tips

    • Use a ripe banana: The riper the banana, the sweeter and more flavourful your baked yogurt will be. Look for a banana with plenty of brown spots for the best results.
    • Mash the banana well: A smooth banana puree will help it blend evenly into the yogurt mixture and create a smoother texture.
    • Adjust the sweetness to your taste: Since bananas vary in sweetness, you can add more or less maple syrup depending on how ripe your banana is.
    • Don’t skip the pinch of salt: A small amount of salt helps enhance the natural sweetness of the banana and makes the flavours taste more balanced.
    • Add extra toppings: Try topping it with banana slices, chopped nuts, peanut butter, cinnamon, or a drizzle of maple syrup.
    • Customize the flavour: Add a little cocoa powder for chocolate banana baked yogurt, or mix in chopped walnuts for a banana bread-inspired version.
