- Ripe Avocado – The star of the show! Adds nutritious healthy fats as well as a creamy texture, making these brownies healthier than traditional brownies that rely on flour and butter.
- Eggs – Helps bind the ingredients and creates that rich, fudgy brownie texture that we know and love.
- Cocoa Powder – Gives our brownies the deep, rich chocolate flavour.
- Maple Syrup or Honey – Naturally sweetens the brownies without the need to add refined white sugar.
- Oat Flour or Almond Flour – Keeps the brownies gluten-free, while giving it some structure.
- Vanilla Extract – For a boost of vanilla flavour.
- Baking Soda – Helps our brownies rise and gives it lift.

Instructions

STEP 1: In a food processor or blender, add in the Wet Ingredients and blend until mixed.

STEP 2: Add in Dry Ingredients to the mixture, and blend again until everything is well combined.

STEP 3: Mix in chocolate chips by stirring them into the batter with a spoon or spatula.

STEP 4: Lightly grease or line an 8x8" baking tray with parchment paper. Pour batter into baking tray, spreading it out evenly.

STEP 5: Bake in a pre-heated oven at 350°F/177°C for 25-30 minutes or until cooked through.

STEP 6: While it's baking, prepare the Chocolate Avocado Frosting by blending the ingredients for the frosting (as listed above) in a food processor or blender until smooth.

STEP 7: When the brownie's done baking, take it out and check for doneness with a toothpick. If it comes out clean, it's ready to eat. Otherwise bake again for an extra 2 minutes. Let the brownies sit out and cool down for 30 minutes to let it settle and firm up.

STEP 8: Once cooled, spread chocolate avocado frosting on top of the brownies. Sprinkle coconut flakes on top.

STEP 9: Cut the brownies into squares, and enjoy!

Equipment
For this recipe, we'll need a food processor or blender. I love using my KitchenAid 3.5 Cup Mini Food Processor for its space-saving compact size and ease-of-use. It works perfectly for this recipe. Or, a bullet blender like my NutriBullet Pro works just as well!

Storage
You can store these brownies away in an air-tight container in the fridge for up to 5 days, or in the freezer for up to 3 months. Just thaw them in the fridge, or heat them up whenever you're ready to enjoy them!
Keep in mind that the chocolate avocado frosting has a shorter shelf life - you can store them away in an air-tight container like a mason jar, in the fridge for up to 2-3 days. Given the frosting's shorter shelf life, feel free to store it separately in a mason jar, and spread it onto the brownie slices individually right before you're ready to enjoy them. The brownies (without the frosting layered on) can last up to 5 days in the fridge, but shortens to about 2-3 days with the frosting.
You can also use the chocolate avocado frosting not only on these brownies, but also on muffins, cakes, and pastries!
