What is Chia Pudding?
Chia Pudding is one of my favourite go-to breakfasts and snacks when I'm looking for something quick, easy and healthy. It's essentially a no-cook method of making pudding by soaking chia seeds in milk in the refrigerator - as the seeds absorb the liquid, in just a couple of hours they'll swell up and expand in size, turning into a deliciously thick, creamy, jelly-like texture that resembles tapioca pudding.
Chia seeds are packed with nutrients, fibre, protein, and healthy fats - and chia pudding is a super easy and tasty way to incorporate the power of this superfood into your diet.

Ingredients

- Chia seeds - the star of the show. You can use black or white chia seeds, either one will work great!
- Milk - I prefer using unsweetened almond milk, but you can use any type of milk you prefer - whether it it's cow's milk or another plant-based alternative.
- Maple syrup - you can use honey, agave nectar, or any other type of sweetener. I personally prefer maple syrup for this recipe!
- Apple sauce - make sure to use unsweetened apple sauce; I love adding purees to my chia pudding as an easy flavour booster!
- Ground cinnamon - we're going to spice things up here.
- Red apple - to be used for the caramelized apple topping - any kind of red apple will work for this!
- Coconut oil - coconut oil works really well here, but you can also use avocado oil for a more neutral flavour if you prefer.
Instructions

STEP 1: In a mason jar (or sealable container), mix together chia seeds, milk, maple syrup, apple sauce, and ground cinnamon.

STEP 2: Let it sit for 5 minutes, and then stir again to break up any clumps. Snap on a lid and refrigerate for 2+ hours.

STEP 3: Right before you're ready to take the chia pudding out from the fridge, let's caramelize our apples. Peel and chop one medium red apple into small chunks.

STEP 4: Then in a saucepan over medium heat, add coconut oil, apple chunks, maple syrup, and ground cinnamon.

STEP 5: Let the apple chunks cook until browned, for 4-5 minutes. Remove from heat.

STEP 6: Take your chia pudding mixture out from the fridge. Add caramelized apples on top, along with a pinch of cinnamon. If you'd like, you can also add a cinnamon stick for garnish. Enjoy!

How to Store
You can store this away in an air-tight container for up to 5 days in the fridge. I like to use an 8-ounce wide mouth mason jar, which has a wide mouth opening that makes it easy to clean and easy to stir ingredients out of. It also has enough room at the top to add in your caramelized onions and other toppings.
Toasty's Tips
- Make sure to follow the Stir → Sit → Stir Again rule by letting the chia mixture sit for 5 minutes and then stirring again before refrigerating. This will ensure a smooth, thick, creamy consistency without clumps. This is a very important step so don't forget!
- While this makes 1 serving, you can batch prep multiple servings at a time by simply multiplying the quantities and using the same ratios for each ingredient.
- Top it off with your favourite nuts, seeds, spices, dried fruits, and whatever else you like.
- I like preparing the caramelized apples right before I'm ready to eat the chia pudding. So I only batch prep and refrigerate the chia pudding mixture on its own, and make the apple topping right before eating so that it's as hot, fresh and tasty as it can be.

FAQ
I'm hungry and can't wait! Do I really have to refrigerate this for 2+ hours?
I hear ya. Unfortunately I wouldn't suggest going under 2 hours. Remember, the magic happens in the fridge! The longer you let the chia seeds soak and absorb the liquid, the softer and thicker they'll be. So even though 2 hours is a minimum, I'd recommend holding out even longer if you can for a smoother, thicker, creamier texture.
Can I warm this up for a cozy fall breakfast?
Absolutely! While chia pudding is typically meant to be eaten chilled straight out of the fridge, you can certainly warm this up in the microwave before eating. It's a wonderful way to enjoy this during the colder fall or winter months (or anytime of the year when you're craving something warm)!
Why is my chia pudding not thickening properly?
You can try a few different things: 1) mix in more chia seeds and refrigerate again for 2+ hours, 2) giving it more time to soak in the fridge to allow the seeds to absorb the liquid, and 3) using a thicker type of milk, such as full-fat coconut milk. In my experience, one of these typically solves it; otherwise, it could be related to the type of chia seeds you are using (perhaps one that has gone past its useful shelf life) and you may want to try purchasing a different batch to use.
