    Ingredients

    • Heavy whipping cream - forms the base of the mousse and gives it a light, airy texture when whipped; make sure it’s cold so it whips properly
    • Semi-sweet or dark chocolate - provides richness and deep chocolate flavour; darker chocolate will give a more intense, less sweet mousse
    • Salt (optional) - a small pinch helps enhance and balance the chocolate flavour

    Or for a lighter option, replace melted chocolate with:

    • Unsweetened cocoa powder - a lighter alternative to melted chocolate
    • Honey or maple syrup - adds sweetness when using cocoa powder instead of chocolate

    Instructions

    STEP 1: Add the cold heavy whipping cream to a large mixing bowl.

    STEP 2: Using an electric mixer, whip the cream until soft peaks form and it becomes light and fluffy, just starting to hold its shape.

    STEP 3: Melt the chocolate until smooth and let it cool slightly so it doesn’t melt the whipped cream.

    STEP 4: Gently fold the melted chocolate into the whipped cream until just combined, being careful not to overmix. Add a pinch of salt if using.

    STEP 5: Spoon the mousse into jars or glasses, cover, and refrigerate for at least 1 hour to allow the texture to set and thicken.

    STEP 6: When it’s chilled and ready, take it out and top it off with your favourite toppings, or enjoy it just as it is.

    Storage and Equipment

    Store the mousse in an airtight container or sealed mason jars in the fridge for up to 2 to 3 days.

    For storage, I love using 8-oz (236 ml) wide-mouth mason jars, as they’re the perfect size for individual portions and come with a sealable lid that makes them great for storing and serving. For this recipe, you’ll also need some mixing bowls and an electric hand mixer.

    • Let the chocolate cool slightly before folding it into the whipped cream so it doesn’t melt or deflate the mousse.
    • Fold gently and avoid overmixing to keep the texture light and airy.
    • For a lighter option, you can use cocoa powder with a bit of sweetener instead of melted chocolate. The flavour will be less rich but still very enjoyable.
    • A pinch of salt helps bring out the chocolate flavour.
    • This mousse will thicken as it chills, so giving it time in the fridge improves the final texture.
    • Serve with toppings like fresh berries, shaved chocolate, or a dusting of cocoa powder for added texture and flavour.
